Didier Ageorges’ passion for cuisine is evident in every event, menu, and plate he creates. From his early training in France, and through his travels around the world, he has amassed a global view and appreciation of ingredients that presents him with a palette of creative opportunities.His teenage years were spent in Culinary school, then after a few years cooking in French Guyana, Didier spent the following two decades in some of France’s most luxurious hotel kitchens, including Hotel du Palais in Biarritz and Hotel Martinez in Cannes. Artistic culinary competition prizes awarded his passion and commitment to his craft. Soon Didier heeded the California call and was posted at San Francisco’s Ritz Carlton. From there, his explorations took him to the Wine Country and Sonoma’s famed Chalk Hill Winery where, as Estate Executive Chef, he paired his stylish creations with elegant wines for awe-inspiring dishes.

After more than a decade in Sonoma County, he has discovered the wealth of the freshest local provisions from artisan producers, a fascinating array of ingredients from which he can artistically craft spellbinding meals. Naturally, this passion drove his decision to start a catering company that could express these experiences to a wide range of clients in the heart of wine country. Soon thereafter, he and Chef Celine Plano opened their first cafe and patisserie in the Russian River Valley.

When he’s not in the kitchen you can find him on his bicycle in the back roads of southeast Asia exploring food markets and local culture.

With over 10 years of culinary expertise, Chef Lynn Chia seamlessly bridges the worlds of cuisine and operations. Her journey began over 20 years ago in the vibrant restaurants of Singapore where she first cultivated her skills in the art of hospitality in front of house service, ascending to corporate training manager for six outlets.

After earning her degree in Culinary Arts from Culinary Institute of America, CIA, Lynn's career trajectory took her from restaurant management to a newfound pursuit of mastering the techniques of French cooking. Her culinary pilgrimage brought her to the US in 2013, securing an apprenticeship with Executive Chef Didier Ageorges at the acclaimed Chalk Hill Winery. Side by side with the founders, she helped launch Pascaline Fine Catering, propelling her leadership role to eventually take the helm of operations for the distinguished catering division and both of Pascaline’s café and bistro locations.

As Operations Manager, Lynn combines her culinary finesse and attention to detail with a strategic approach, elevating food quality and optimizing operational efficiency. Her culinary prowess provides a unique foundation for understanding the intricacies of kitchen logistics, resulting in a superlative guest experience.

Pascaline History

Pascaline, a leading purveyor of casual French cuisine and exceptional baked goods, announced the launch of its second location in Santa Rosa in July of 2023. Pascaline French Bistro & Patisserie offers a variety of French-inspired dishes with locally sourced ingredients, including pastries, breakfast, gourmet sandwiches, salads, and entrées.

The Bistro is in the former home of “Worth Our Weight” culinary school where Chef Didier partnered with owner Evelyn Cheatham to benefit local youth programs. Pascaline was founded in 2014 as a fine-dining caterer and has been growing steadily since opening its first café in 2015. The original “Pascaline Patisserie and Café” location in Sebastopol closed at the end of 2023.

The all new, charming French Bistro serves your favorites from the original Café in Sebastopol, as well as introducing some new, delectable creations. The warm and modern décor creates a relaxed atmosphere, making it the perfect destination for an uplifting breakfast retreat or an intimate lunch gathering. In the evenings, the new bistro location will include pop-up winemaker dinners, private event buyouts and holiday take-out platters. Whether you’re a loyal patron from Sebastopol or a newcomer, Pascaline promises to deliver unparalleled dining experiences that will satisfy your cravings and leave you with cherished memories.

Pascaline was initially founded as a full-service catering company by Didier Pascal Ageorges and Celine Plano, two classically trained French chefs. “Pascaline” is an amalgamation of their names, formed in the spirit of collaboration blending the qualities of French tradition with Wine Country ambiance. “I succumbed to the beauty of Sonoma County 20 years ago and became a resident of Santa Rosa. I always wanted to bring my unique brand of French cuisine to this community, where enjoyment of the landscape, good wine and culinary diversity drives the people,” said Didier Ageorges, executive chef and owner of Pascaline. “As we open our doors in Montgomery Village, Santa Rosa, we invite you to join us in celebrating this exciting milestone.”
